Description

This 16 year old was distilled at Glenallachie on the 26th November 2007 before being bottled from a Pedro Ximenez puncheon (#4404) in September 2024.

GlenAllachie is located near Aberlour in the Speyside whisky producing region. It is a relatively new distillery founded in 1967 by Mackinlay, McPherson & Co.

It was designed by the architect William Delme Evans and the structure is both modern and aesthetically pleasing. In 2017 the distillery was sold to The GlenAllachie Consortium and at its helm is the famous master blender Billy Walker.

The spirit resting in the warehouses has been transformed into some great quality releases. Billy Walker repeatedly assesses the ageing whisky and re-racks it into new quality casks to add more layers of flavour.

Fermentations are lengthy at GlenAllachie and a minimal amount of the spirit made is heavily peated. In 2018 a core range was released consisting of 12, 18 and 25 year olds.

There have also been additions to this range of a 21 year old cask strength matured in PX casks. Plus theres a 30 year old cask strength from PX, oloroso and chinquapin virgin oak

 

Tasting Notes

 

Nose: The Pedro Ximénez sherry influence is immediate, showing notes of raisins, sticky dates, boozy Christmas cake, and a rich brown sugar sweetness. It is further layered with dark fruity spice, toasted almonds, cocoa, and a hint of cinnamon.

Palate: Thick, rich, and mouth-coating. The flavor is sugary sweet initially, moving into a "liquid whole nut chocolate" profile. It has a bold, "Marmite-like" intensity, featuring deep liquorice, dark molasses, and a slight hint of chilli heat.

Finish: Deep, dark, and exceptionally long. It features a lasting, sticky molasses and liquorice character, rounded off with vanilla oak and a hint of warm spice
