This fulsome and forward dram is a fantastic meeting of moreish Christmas cake flavours – from the cask – and the distinct barley sugar and shortbread spirit character we’ve grown to associate with Daftmill.
A round, mouthcoating texture and a playful spicy kick give yet more credence to Francis Cuthbert’s reputation as Fife’s finest.
The whisky in this Daftmill 2012 Winter Batch Release was drawn from a combination of seven first fill ex-bourbon barrels and five first fill ex-oloroso and PX sherry hogsheads.
All casks were filled on 25th December 2012 and matured in the upper level of the distillery's dunnage warehouse until bottling in February 2026.
The whisky was produced using Concerto barley grown in the South fields at Daftmill.
The barley was harvested on the 2nd and 3rd of September 2011, before being dried and stored on the farm and later malted in Alloa during the spring of 2012.
Here, Daftmill’s Francis Cuthbert has created a seasonal release using a sizeable proportion of whiskies aged in ex-Sherry casks – unusual for this renowned distillery.
Nose: Fresh and floral, with notes of lemon zest, unripe pears, green apples, and subtle grassy undertones.
Palate: Light yet oily, featuring creamy vanilla, white chocolate, and sweet orchard fruit, often with hints of banana, peach, or pear.
Finish: Medium-long, balanced with a gentle spiciness, vanilla, and slight oak.
