Description

Barrell Craft Spirits, located in Louisville, Kentucky, is an independent blender specializing in aged, cask-strength whiskey and rum expressions.

One of their latest releases, Dovetail, is a distinctive spirit crafted by finishing whiskey in a blend of rum, Port, and Dunn Vineyards Cabernet Sauvignon casks.

The result is a complex flavor profile featuring a rich combination of fresh, dried, and cooked fruits, complemented by floral notes and a peppery spice from the casks.

Tasting Notes

 

Nose: Dense and inviting, opening with sweet aromas of molasses, cane, sugar and raisins. Subtle floral and herbaceous undertones mingle with walnut oil, leather, and a hint of dark cherry.

Palate: Unctuous and thick on the tongue. It transitions into bold notes of dark chocolate, burnt marshmallow, and rich brown sugar. This is balanced beautifully by wine tannins, baking spices like nutmeg, and a lingering minerality.

Finish: Long and warming. The finish fades out with lingering peppery spice, dark berry compote, and a gently drying, nutty oak aftertaste.
