Redbreast’s Iberian Series celebrates Gilbey’s sherry history of importing fortified wines and sherry since the late 1800s – with a series of releases from across the Iberian peninsula.
Master Blender David McCabe has travelled to source casks from the sun-kissed bodegas of Spain to the sun-drenched quintas of Portugal, to explore and expand the sherried flavours of Redbreast.

The 5th internation in the famed Redbreast Iberian Series sees Master Blender David McCabe use Moscatel Wine casks from the hills of Málaga, Spain to finish our signature Single Pot Still Irish Whiskey.
Spanish Moscatel is known for its floral aromas accompanied with pineapple, peach and notes of honey.
The wine is aged in American Oak for 24 months before the casks are emptied and transferred to the Midleton Distillery for aging.
Redbreast’s Single Pot Still Irish Whiskey has been maturing in these casks since June 2024.
Nose: A fresh and floral balance of zesty fruits with dustings of nutmeg and rich vanilla oak.
Palate: Vibrant fruits combined with textured layers of toffee and honeycomb, subtle undertones of dried herbs, all while the oak remains consistent.
Finish: Pot still spices and wine seasoned oak lingering until the very end.
