Daftmill Distillery is one of Scotland's newer single malt Scotch whisky distilleries, located in the heart of Fife, in a converted barn at Daftmill Farm.
In 2005, the distillery was granted a licence to produce whisky and the first whisky was produced on 16 December 2005.
Built in a converted meal mill and using un-peated malt, Daftmill has a maximum production capacity of only 20,000 litres of alcohol per year, making it a very low volume distillery.
Their first release was introduced as Daftmill 2005-12 Year Inaugural Release.
Distilled in November/December 2010 and bottled in 2023 using 25 first fill ex-bourbon barrels. Grown, distilled, matured and bottled in Fife, Scotland.
This is one of only 6550 bottles released.
Nose: Very classical Daftmill with distillery character front and centre. A lot of freshly mown grass, green herbs, crushed nettles and plenty of typical yellow and green fruits. Also some flowers and their pollens.
Palate: A good balance of sweetness with fruits, citrus curds and custard, along with slightly drier tones of fruit teas, chamomile and linseed oil. A very easy and sippable profile.
Finish: Medium in length, with a good balance of sweetness and dryness and elegant floral notes.
