Using 100% Irish malted barley, Waterford’s Single Farm Origin series is a range of limited edition natural whiskies that explore Irish “teireoir” – one farm, one place at a time.
No colouring, chill-filtration or additives are used meaning this whisky retails all original colour, aromas and taste.
Known locally as ‘the place of the lush grass’ Sheestown is a rolling, lowland terroir of well- drained loamy soil where Phillip O’Brien has farmed the land for half a century.
For maturation, 35% of the casks were first-fill American oak, 21% virgin American oak, 25% premium French oak and 19% were previously used to age vin doux naturel.
Nose: Earthy notes on the nose with clove, poached pears and honeycomb.
Palate: Gentle spice mix greets the palate with lasting cloves that dries with citrus peel marmalade and fresh honey.
Finish: A long spicy finish that leaves a warm tingle on the front of the tongue.
